Vinification et Chartes


Once the manual harvest is over and the selection processes are completed, grapes are pressed in a pneumatic wine press and the juice is left one night to decant. We believe that each vineyard has its own specific yeasts and doesn't need any additional ones.

For quality reasons, storing and ageing are made in oak barrels. Our wines are matured on fine lees during one year until they find their natural balance to be digestible and beneficial.
